Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (approx. 50g)
  • 1 tsp (5ml) vanilla extract
  • 2 3/4 cups (340g) all-purpose flour
  • 2 tsp (6g) cream of tartar
  • 1 tsp (6g) baking soda
  • 1/2 tsp (3g) salt
  • 1/4 cup (50g) granulated sugar
  • 2 tbsp (15g) ground cinnamon

Instructions:

  1. Cream together the softened butter and 3/4 cup granulated sugar on medium-high speed until the mixture looks pale and fluffy.
  2. Beat in the egg and vanilla extract until fully emulsified into a smooth, pale yellow cream.
  3. In a separate bowl, whisk together the all-purpose flour, cream of tartar, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients on low speed, mixing only until the white streaks of flour disappear.
  5. Scoop rounded tablespoons of dough and roll them into 1-inch balls.
  6. Combine 1/4 cup sugar and 2 tbsp cinnamon in a small bowl; roll each dough ball generously in the mixture until fully coated.
  7. Place the coated dough balls on parchment-lined baking sheets, spaced 2 inches apart.
  8. Bake at 375°F (190°C) for 10–12 minutes, removing them when the edges are set and the centers have slightly puffed but still look soft.
