Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg (approx. 50g)
- 1 tsp (5ml) vanilla extract
- 2 3/4 cups (340g) all-purpose flour
- 2 tsp (6g) cream of tartar
- 1 tsp (6g) baking soda
- 1/2 tsp (3g) salt
- 1/4 cup (50g) granulated sugar
- 2 tbsp (15g) ground cinnamon
Instructions:
- Cream together the softened butter and 3/4 cup granulated sugar on medium-high speed until the mixture looks pale and fluffy.
- Beat in the egg and vanilla extract until fully emulsified into a smooth, pale yellow cream.
- In a separate bowl, whisk together the all-purpose flour, cream of tartar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients on low speed, mixing only until the white streaks of flour disappear.
- Scoop rounded tablespoons of dough and roll them into 1-inch balls.
- Combine 1/4 cup sugar and 2 tbsp cinnamon in a small bowl; roll each dough ball generously in the mixture until fully coated.
- Place the coated dough balls on parchment-lined baking sheets, spaced 2 inches apart.
- Bake at 375°F (190°C) for 10–12 minutes, removing them when the edges are set and the centers have slightly puffed but still look soft.
