Ingredients:

  • 1 tbsp olive oil
  • 1 medium (150g) yellow onion, finely diced
  • 3 cloves (15g) garlic, minced
  • 1 tbsp (15g) fresh ginger, grated
  • 1 lb (450g) lean ground turkey
  • 1 tsp (2g) ground cumin
  • 1 tsp (2g) ground coriander
  • 1/2 tsp (1g) turmeric powder
  • 1/2 tsp (1g) smoked paprika
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1/2 cup (120ml) light coconut milk
  • 3 cups (450g) cooked basmati rice
  • 1 cup (150g) fresh baby spinach
  • 1 tbsp (15ml) fresh lime juice

Instructions:

  1. Heat oil in the skillet over medium-high heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Stir in the minced garlic and grated ginger. Cook for 60 seconds until the fragrance is potent and the garlic is barely golden.
  3. Add the ground turkey to the pan. Increase heat to high and cook, breaking the meat apart with a spoon until browned.
