Ingredients:
- 1 tbsp olive oil
- 1 medium (150g) yellow onion, finely diced
- 3 cloves (15g) garlic, minced
- 1 tbsp (15g) fresh ginger, grated
- 1 lb (450g) lean ground turkey
- 1 tsp (2g) ground cumin
- 1 tsp (2g) ground coriander
- 1/2 tsp (1g) turmeric powder
- 1/2 tsp (1g) smoked paprika
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1/2 cup (120ml) light coconut milk
- 3 cups (450g) cooked basmati rice
- 1 cup (150g) fresh baby spinach
- 1 tbsp (15ml) fresh lime juice
Instructions:
- Heat oil in the skillet over medium-high heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and grated ginger. Cook for 60 seconds until the fragrance is potent and the garlic is barely golden.
- Add the ground turkey to the pan. Increase heat to high and cook, breaking the meat apart with a spoon until browned.
