Ingredients:
- 1 lb lean ground turkey
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 3 large bell peppers, chopped into 1-inch pieces
- 3 cups cooked brown rice
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup beef broth
- 2 cups shredded sharp cheddar cheese
- 2 tbsp fresh parsley, chopped
Instructions:
- Heat olive oil over medium-high heat in a large oven-safe skillet. Add the ground turkey, breaking it apart with a spatula until browned. Stir in the diced onion and bell peppers, sautéing for 5-7 minutes until onions are translucent and peppers have softened slightly.
- Stir in the minced garlic and tomato paste, cooking for 2 minutes until the paste turns a deep brick red.
- Fold in the cooked rice, diced tomatoes, broth, and seasonings (oregano, smoked paprika, salt, and black pepper). Stir constantly for 3-5 minutes until the liquid reduces and the rice is thoroughly coated.
- Transfer the mixture to a baking dish if not using an oven-safe skillet. Spread the shredded cheese evenly across the top.
- Bake at 375°F (190°C) for 15-20 minutes, or until the cheese is bubbling and golden-brown.
- Garnish with fresh chopped parsley before serving.
