Ingredients:
- 1 lb ground turkey (lean 93%)
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 3 large bell peppers, chopped into 1-inch pieces
- 2 cups cooked white or brown rice
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup tomato sauce
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups shredded mozzarella or cheddar cheese
- 2 tbsp fresh parsley, chopped
Instructions:
- Heat the olive oil over medium-high heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned and no longer pink.
- Stir in the diced onion and cook for 3–4 minutes until translucent. Add the minced garlic and chopped bell peppers, sautéing for another 5 minutes until peppers are vibrant and slightly tender.
- Pour in the diced tomatoes, tomato sauce, oregano, paprika, salt, and pepper. Stir in the cooked rice, folding gently to combine.
- Lower the heat to medium-low and simmer for 5–7 minutes until the sauce has thickened.
- Sprinkle shredded cheese evenly across the surface. Cover the skillet with a lid for 2–3 minutes until the cheese is melted and bubbly. Garnish with fresh parsley.
