Ingredients:

  • 1 lb ground turkey (lean 93%)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 large bell peppers, chopped into 1-inch pieces
  • 2 cups cooked white or brown rice
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup tomato sauce
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded mozzarella or cheddar cheese
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Heat the olive oil over medium-high heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned and no longer pink.
  2. Stir in the diced onion and cook for 3–4 minutes until translucent. Add the minced garlic and chopped bell peppers, sautéing for another 5 minutes until peppers are vibrant and slightly tender.
  3. Pour in the diced tomatoes, tomato sauce, oregano, paprika, salt, and pepper. Stir in the cooked rice, folding gently to combine.
  4. Lower the heat to medium-low and simmer for 5–7 minutes until the sauce has thickened.
  5. Sprinkle shredded cheese evenly across the surface. Cover the skillet with a lid for 2–3 minutes until the cheese is melted and bubbly. Garnish with fresh parsley.
