Ingredients:
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 cup chicken or beef broth
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup long-grain white rice
- 2 cups water or broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 large avocado, diced
- 1/2 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions:
- Rinse the rice under cold water until the water runs clear. Combine rice and water/broth in a pot; bring to a boil, then reduce to low, cover, and simmer until fluffy (approx. 15–20 mins). In the final 2 minutes of cooking, stir in the drained black beans and corn to warm through.
- Heat olive oil in a large skillet over medium-high heat. Add the ground turkey in a thick layer and press down with a spatula. Let it sear undisturbed for 3-4 minutes until a brown crust forms. Break the meat into bite-sized pieces and cook until no longer pink.
- Reduce heat to medium. Sprinkle the chili powder, cumin, garlic powder, onion powder, salt, and pepper over the meat. Stir for 1 minute until fragrant.
- Pour in the broth and simmer for 2-3 minutes until the liquid has reduced into a glossy glaze that coats the turkey.
- Divide the rice and bean mixture into four bowls. Top with a generous scoop of seasoned turkey. Arrange diced avocado, red onion, and cilantro on top. Serve with lime wedges.
