Ingredients:

  • 1 lb lean ground turkey
  • 1.5 lbs Yukon Gold potatoes, peeled and diced into ½-inch cubes
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp avocado oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp cracked black pepper
  • ¼ tsp crushed red pepper flakes

Instructions:

  1. Dice the potatoes and onions uniformly and combine the spice blend in a small bowl.
  2. Heat oil in a 12-inch skillet over medium-high heat until shimmering. Add ground turkey in an even layer and sear undisturbed for 3-4 minutes to develop a brown crust.
  3. Break the turkey apart with a spatula and cook until no longer pink. Remove turkey from the pan and set aside on a plate.
  4. In the same pan, add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until edges are golden and crisp.
  5. Stir in the diced onion and minced garlic, sautéing for 3-5 minutes until the onion becomes translucent.
  6. Return the browned turkey to the pan, sprinkle the spice blend evenly over the mixture, and stir constantly for 2-3 minutes to toast the spices.
