Ingredients:

  • 2 cups fresh raspberries (250g)
  • 1/4 cup granulated sugar (50g)
  • 1 tbsp fresh lemon juice (15ml)
  • 2 cups plain Greek yogurt (475g)
  • 3 tbsp honey (45ml)
  • 1 tsp vanilla extract (5ml)
  • 1 1/2 cups granola or crushed digestive biscuits (150g)
  • 1/2 cup fresh raspberries (60g)

Instructions:

  1. Combine 2 cups of raspberries, sugar, and lemon juice in a small saucepan over medium heat. Stir gently until the berries break down and the mixture becomes thickened and glossy. Remove from heat and let cool to room temperature.
  2. In a mixing bowl, whisk together the Greek yogurt, honey, and vanilla extract until the mixture is smooth and velvety.
  3. Spoon a layer of granola or crushed biscuits into the bottom of 6 glass tumblers.
  4. Add a layer of the creamy yogurt mixture over the granola, followed by a swirl of the cooled raspberry coulis.
  5. Repeat the layers until the glasses are full, then top with a garnish of fresh raspberries.
  6. Chill in the refrigerator for 1 hour before serving.
