Ingredients:
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (100g) honey
- 0.75 cup (180g) plain Greek yogurt
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1 tbsp (12g) lemon zest
- 1.5 tsp (7g) baking powder
- 0.5 tsp (3g) salt
- 2 tbsp (30ml) coconut oil
- 2 cups (300g) fresh blueberries
- 1 tbsp (8g) all-purpose flour
Instructions:
- Preheat oven to 350°F (175°C). Grease an 8-inch pan and line the bottom with parchment paper. In a small bowl, toss the blueberries with 1 tablespoon of flour until lightly coated.
- In a large bowl, whisk together the eggs, honey, Greek yogurt, melted coconut oil, vanilla, and lemon zest until smooth and pale.
- Sift in the flour, baking powder, and salt. Gently whisk until just combined; avoid overmixing to ensure the cake remains tender.
- Fold in the floured blueberries using a spatula. Pour the batter into the prepared pan and smooth the top.
- Bake for 40–45 minutes, or until the top is mahogany-colored and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
