Ingredients:

  • 1 lb firm zucchini, cut into 3-inch sticks
  • 1/2 tsp kosher salt
  • 2 large eggs, beaten
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or avocado oil spray

Instructions:

  1. Cut the zucchini into uniform sticks roughly 1/2 inch thick. Note: Uniform size means they all finish cooking at the same time.
  2. Lay them on a paper towel, sprinkle with 1/2 tsp kosher salt, let sit for 5 minutes, then pat completely dry. until no visible moisture remains.
  3. Set up two shallow bowls: one with beaten eggs and one with a mixture of 1/2 cup Panko, 1/2 cup Parmesan, 1 tsp garlic powder, 1/2 tsp smoked paprika, and 1/4 tsp black pepper.
  4. Dip each zucchini stick into the egg, shake off the excess, and press firmly into the Parmesan mixture until fully coated.
  5. For Oven Method: Preheat to 425°F (218°C).
  6. Place fries on a wire rack over a baking sheet, spray liberally with olive oil or avocado oil spray.
  7. Bake for 15-20 minutes until mahogany colored and crisp.
  8. For Air Fryer Method: Preheat to 400°F (200°C).
  9. Place fries in a single layer, spray with oil, and cook for 10-12 minutes, shaking halfway through until they sizzle and brown.
