Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 1/3 cup (75g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 1/4 tsp (1.5g) salt
- 8 oz (225g) cream cheese, softened
- 1/2 cup (120ml) heavy cream, chilled
- 1/3 cup (40g) powdered sugar
- 1 cup (150g) fresh blueberries, pureed and strained
- 1 tsp (5ml) lemon juice
- 1 tsp (5g) vanilla extract
- 1 cup (150g) fresh blueberries
- 1 tbsp (15ml) maple syrup
Instructions:
- In a food processor, pulse the graham cracker crumbs, melted butter, sugar, and salt until the mixture resembles wet sand.
- Pour the mixture into a 9-inch tart pan. Using the bottom of a flat measuring cup, press the crumbs firmly into the bottom and up the sides.
- Place the crust in the freezer for 10 minutes to lock the fats in place.
- Beat the softened cream cheese and powdered sugar until completely smooth.
- Mix in the vanilla extract and lemon juice.
- Gently fold in the strained blueberry puree until the texture is velvety.
- In a separate bowl, whip the heavy cream to stiff peaks, then carefully fold the whipped cream into the blueberry mixture using a spatula.
- Pour the filling into the chilled crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours to allow the filling to set.
- Toss fresh blueberries in maple syrup and arrange them on top. Garnish with mint leaves before serving.
