Ingredients:
- 2 lbs Ground Turkey (93% lean / 7% fat)
- 1 cup Panko breadcrumbs
- 1/3 cup Whole milk
- 1 large egg, beaten
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp Olive oil
- 1/4 cup Fresh parsley, chopped
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 tsp Dried oregano
- 1/3 cup Ketchup
- 1 tbsp Brown sugar
- 1 tbsp Apple cider vinegar
- 1/2 tsp Smoked paprika
Instructions:
- Heat olive oil in a skillet over medium heat. Add diced onions and cook until translucent (about 5 minutes). Stir in the minced garlic and cook for 1 more minute until fragrant. Remove from heat and let cool slightly.
- In a small bowl, stir together the panko breadcrumbs and milk. Let this sit for 5 minutes until the breadcrumbs have absorbed the liquid and formed a thick paste.
- In a large bowl, combine the ground turkey, the milk-soaked panko, beaten egg, cooled onion/garlic mixture, parsley, salt, pepper, and oregano. Gently fold the ingredients together by hand, stopping as soon as combined.
- Preheat oven to 350°F (175°C). Press the mixture into a greased 9x5 loaf pan and bake for 30 minutes.
- Whisk together ketchup, brown sugar, apple cider vinegar, and smoked paprika. Remove the loaf from the oven, spread the glaze evenly over the top, and bake for another 15-20 minutes until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the meatloaf rest in the pan for 10 minutes before slicing.
