Ingredients:

  • 2 lbs Ground Turkey (93% lean / 7% fat)
  • 1 cup Panko breadcrumbs
  • 1/3 cup Whole milk
  • 1 large egg, beaten
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp Olive oil
  • 1/4 cup Fresh parsley, chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Dried oregano
  • 1/3 cup Ketchup
  • 1 tbsp Brown sugar
  • 1 tbsp Apple cider vinegar
  • 1/2 tsp Smoked paprika

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add diced onions and cook until translucent (about 5 minutes). Stir in the minced garlic and cook for 1 more minute until fragrant. Remove from heat and let cool slightly.
  2. In a small bowl, stir together the panko breadcrumbs and milk. Let this sit for 5 minutes until the breadcrumbs have absorbed the liquid and formed a thick paste.
  3. In a large bowl, combine the ground turkey, the milk-soaked panko, beaten egg, cooled onion/garlic mixture, parsley, salt, pepper, and oregano. Gently fold the ingredients together by hand, stopping as soon as combined.
  4. Preheat oven to 350°F (175°C). Press the mixture into a greased 9x5 loaf pan and bake for 30 minutes.
  5. Whisk together ketchup, brown sugar, apple cider vinegar, and smoked paprika. Remove the loaf from the oven, spread the glaze evenly over the top, and bake for another 15-20 minutes until the internal temperature reaches 165°F (74°C).
  6. Remove from the oven and let the meatloaf rest in the pan for 10 minutes before slicing.
