Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 1/3 cup (75g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 1/4 tsp (1.5g) salt
- 3 large (150g) eggs, room temperature
- 3/4 cup (150g) granulated sugar
- 1/2 cup (120ml) fresh lemon juice
- 1 tbsp (6g) lemon zest, finely grated
- 1/4 cup (60ml) heavy whipping cream
- 2 tbsp (28g) unsalted butter, cubed
- 1 cup (150g) fresh blueberries
- 1 tbsp (15ml) apricot preserves
- Fresh mint leaves
Instructions:
- Mix graham cracker crumbs, sugar, and salt in a bowl. Pour in the melted butter and stir until the mixture resembles wet sand.
- Firmly press the mixture into the bottom and up the sides of a 9-inch tart pan. Use the bottom of a flat measuring cup to ensure the edges are tight.
- Place the crust in the freezer for 10 minutes to lock the fats in place.
- Whisk eggs and sugar together until pale and slightly thickened.
- Stir in the lemon juice and zest until fully combined.
- Gently fold in the heavy cream and cubed butter.
- Pour the mixture into the chilled crust, smoothing the top with a spatula.
- Chill in the refrigerator for at least 2 hours until the filling is firm to the touch.
- Gently press fresh blueberries into the top of the set curd in a concentric circle pattern.
- Warm the apricot preserves in the microwave for 10 seconds and lightly brush over the berries for a gloss shine.
- Garnish with fresh mint leaves in the center.
