Ingredients:

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 8 tbsp ice water
  • 6 cups fresh blueberries
  • 0.75 cup granulated sugar
  • 0.25 cup cornstarch
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 0.25 tsp ground cinnamon
  • 0.25 tsp salt

Instructions:

  1. Combine flour, salt, and sugar in a bowl. Pulse in the chilled butter until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
  2. Gradually add ice water, one tablespoon at a time, until the dough just holds together.
  3. Divide the dough into two discs, wrap in plastic, and chill for at least 2 hours to relax the gluten.
  4. In a large bowl, combine the fresh blueberries, sugar, cornstarch, lemon zest, lemon juice, cinnamon, and salt.
  5. Toss gently with a spatula until every berry is evenly coated in the sugar-starch mixture; let sit for 15 minutes.
