Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 1 tsp (2g) baking powder
  • 1 tbsp (8g) ground cinnamon
  • 1/4 tsp (1.5g) sea salt
  • 1 1/2 cups (355ml) unsweetened almond milk
  • 1 large (50g) egg
  • 1/4 cup (60ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (120g) plain Greek yogurt
  • 2 medium (300g) apples, peeled and diced
  • 1 tsp (2g) ground cinnamon
  • 2 tbsp (28g) melted coconut oil

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with coconut oil or line it with parchment paper.
  2. In a large bowl, whisk together the rolled oats, baking powder, 1 tablespoon of cinnamon, and salt.
  3. In a separate bowl, combine the almond milk, egg, maple syrup, vanilla, and Greek yogurt until the mixture is smooth.
  4. Pour the wet ingredients over the oats and stir until fully incorporated.
  5. Toss the diced apples with the additional teaspoon of cinnamon, then gently fold the apples into the oat mixture.
  6. Pour the batter into the prepared dish, smoothing the top with a spatula. Bake for 30 minutes or until the center is set and the top is golden brown.
