Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (2g) baking powder
- 1 tbsp (8g) ground cinnamon
- 1/4 tsp (1.5g) sea salt
- 1 1/2 cups (355ml) unsweetened almond milk
- 1 large (50g) egg
- 1/4 cup (60ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 1/2 cup (120g) plain Greek yogurt
- 2 medium (300g) apples, peeled and diced
- 1 tsp (2g) ground cinnamon
- 2 tbsp (28g) melted coconut oil
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with coconut oil or line it with parchment paper.
- In a large bowl, whisk together the rolled oats, baking powder, 1 tablespoon of cinnamon, and salt.
- In a separate bowl, combine the almond milk, egg, maple syrup, vanilla, and Greek yogurt until the mixture is smooth.
- Pour the wet ingredients over the oats and stir until fully incorporated.
- Toss the diced apples with the additional teaspoon of cinnamon, then gently fold the apples into the oat mixture.
- Pour the batter into the prepared dish, smoothing the top with a spatula. Bake for 30 minutes or until the center is set and the top is golden brown.
