Ingredients:
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 cup chunky salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1/2 cup chicken broth
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions:
- Heat the olive oil over medium-high heat in a 12-inch skillet. Add the ground turkey and cook, breaking it apart with a spatula, until no longer pink and lightly browned.
- Add the diced onion to the skillet and sauté for 3–4 minutes until translucent, then stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Lower the heat to medium. Sprinkle the taco seasoning over the meat, stirring constantly for 1 minute to toast the spices.
- Pour in the chunky salsa, drained black beans, thawed corn, and chicken broth. Stir well to combine.
- Simmer uncovered for 5–8 minutes until the liquid reduces into a thick, glossy sauce.
- Spread shredded cheddar cheese evenly over the top. Cover the skillet with a lid for 1–2 minutes until the cheese is completely melted and bubbling.
- Remove from heat and garnish with chopped cilantro and lime wedges.
