Ingredients:

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup chunky salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1/2 cup chicken broth
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions:

  1. Heat the olive oil over medium-high heat in a 12-inch skillet. Add the ground turkey and cook, breaking it apart with a spatula, until no longer pink and lightly browned.
  2. Add the diced onion to the skillet and sauté for 3–4 minutes until translucent, then stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Lower the heat to medium. Sprinkle the taco seasoning over the meat, stirring constantly for 1 minute to toast the spices.
  4. Pour in the chunky salsa, drained black beans, thawed corn, and chicken broth. Stir well to combine.
  5. Simmer uncovered for 5–8 minutes until the liquid reduces into a thick, glossy sauce.
  6. Spread shredded cheddar cheese evenly over the top. Cover the skillet with a lid for 1–2 minutes until the cheese is completely melted and bubbling.
  7. Remove from heat and garnish with chopped cilantro and lime wedges.
