Ingredients:
- 2 ¼ cups (280g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- ¾ cup (170g) unsalted butter, softened
- 3 large eggs (room temperature)
- 1 cup (240ml) whole milk
- 1 tsp (5ml) vanilla extract
- 1 tbsp (6g) lemon zest, finely grated
- 2 cups (300g) fresh blueberries
- 1 tbsp all-purpose flour (for tossing berries)
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (15ml) heavy cream or milk
- ¼ tsp (1g) lemon extract
Instructions:
- Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with a parchment paper sling.
- In a small bowl, toss the fresh blueberries with 1 tablespoon of flour until lightly coated to prevent them from sinking.
- Cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and lemon zest.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Alternately add the dry flour mixture and the whole milk into the butter mixture, mixing until just combined.
- Gently fold in the floured blueberries using a spatula and spread the batter evenly into the prepared pan.
- Bake for 35–40 minutes, or until the center springs back when lightly pressed and edges are pale golden brown.
- Whisk together powdered sugar, lemon juice, and cream (and optional lemon extract) to create the glaze.
- Drizzle the glaze over the warm cake in a zig-zag pattern and let set for 15 minutes before slicing.
