Ingredients:
- 2 cups rolled oats
- 3 tbsp ground flaxseed
- 2 tbsp brewer’s yeast
- 0.5 tsp sea salt
- 0.5 cup cashew butter
- 0.33 cup maple syrup
- 1 tsp vanilla extract
- 0.5 tsp almond extract
- 3 tbsp rainbow sprinkles
Instructions:
- Place 1 cup of the rolled oats into a food processor or high-speed blender. Pulse until it reaches a fine, powdery oat flour consistency.
- In a large mixing bowl, whisk together the processed oat flour, the remaining 1 cup of whole rolled oats, ground flaxseed, brewer's yeast, and sea salt.
- Create a well in the center of the dry ingredients and add the cashew butter, maple syrup, vanilla extract, and almond extract.
- Stir with a silicone spatula until a thick, cohesive dough forms. Fold in the rainbow sprinkles until evenly distributed.
- Use a 1-tablespoon cookie scoop to portion the dough, then roll into smooth balls with your hands.
- Place the bites on a parchment-lined tray and chill in the refrigerator for 20 minutes to set before serving.
