Ingredients:

  • 2 cups rolled oats
  • 3 tbsp ground flaxseed
  • 2 tbsp brewer’s yeast
  • 0.5 tsp sea salt
  • 0.5 cup cashew butter
  • 0.33 cup maple syrup
  • 1 tsp vanilla extract
  • 0.5 tsp almond extract
  • 3 tbsp rainbow sprinkles

Instructions:

  1. Place 1 cup of the rolled oats into a food processor or high-speed blender. Pulse until it reaches a fine, powdery oat flour consistency.
  2. In a large mixing bowl, whisk together the processed oat flour, the remaining 1 cup of whole rolled oats, ground flaxseed, brewer's yeast, and sea salt.
  3. Create a well in the center of the dry ingredients and add the cashew butter, maple syrup, vanilla extract, and almond extract.
  4. Stir with a silicone spatula until a thick, cohesive dough forms. Fold in the rainbow sprinkles until evenly distributed.
  5. Use a 1-tablespoon cookie scoop to portion the dough, then roll into smooth balls with your hands.
  6. Place the bites on a parchment-lined tray and chill in the refrigerator for 20 minutes to set before serving.
