Ingredients:
- 2 cups unsalted butter
- 0.5 cup sweet onion, finely minced
- 0.25 cup fresh garlic, minced
- 4 tbsp Cajun seasoning
- 2 tbsp smoked paprika
- 1 tbsp lemon pepper seasoning
- 1 tbsp brown sugar
- 1 tsp red chili flakes
- 3 tbsp fresh lemon juice
- 1 tbsp Worcestershire sauce
- 0.5 cup chicken stock
Instructions:
- In a large deep skillet or saucepan over medium-low heat, melt 1 stick (113g) of the butter.
- Add the finely minced onions to the melted butter and sauté for 4–5 minutes until translucent and soft.
- Add the minced garlic and cook for exactly 60 seconds until fragrant and pale gold.
- Stir in the Cajun seasoning, smoked paprika, lemon pepper, brown sugar, and chili flakes. Bloom the spices in the fat for 2 minutes, stirring constantly until the oil turns a deep red.
- Whisk in the lemon juice, Worcestershire sauce, and chicken stock. Gradually whisk in the remaining cold butter pieces to create a thick, stable emulsion.
