Ingredients:

  • 2 cups unsalted butter
  • 0.5 cup sweet onion, finely minced
  • 0.25 cup fresh garlic, minced
  • 4 tbsp Cajun seasoning
  • 2 tbsp smoked paprika
  • 1 tbsp lemon pepper seasoning
  • 1 tbsp brown sugar
  • 1 tsp red chili flakes
  • 3 tbsp fresh lemon juice
  • 1 tbsp Worcestershire sauce
  • 0.5 cup chicken stock

Instructions:

  1. In a large deep skillet or saucepan over medium-low heat, melt 1 stick (113g) of the butter.
  2. Add the finely minced onions to the melted butter and sauté for 4–5 minutes until translucent and soft.
  3. Add the minced garlic and cook for exactly 60 seconds until fragrant and pale gold.
  4. Stir in the Cajun seasoning, smoked paprika, lemon pepper, brown sugar, and chili flakes. Bloom the spices in the fat for 2 minutes, stirring constantly until the oil turns a deep red.
  5. Whisk in the lemon juice, Worcestershire sauce, and chicken stock. Gradually whisk in the remaining cold butter pieces to create a thick, stable emulsion.
