Ingredients:
- 6 cups (750g) fresh blueberries
- 3 tbsp (45ml) fresh lemon juice
- 1 tsp (5g) lemon zest
- 1/4 cup (60ml) pure maple syrup
- 2 tbsp (16g) cornstarch
- 1/4 tsp (1.5g) ground cinnamon
- 1 cup (90g) old-fashioned rolled oats
- 1/2 cup (60g) almond flour
- 1/2 cup (100g) coconut sugar
- 1/2 tsp (2.5g) salt
- 1 tsp (2.5g) ground cinnamon
- 1/2 cup (113g) unsalted butter, cold and cubed
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the blueberries, lemon juice, lemon zest, maple syrup, cornstarch, and cinnamon. Toss gently until the berries are evenly coated.
- Pour the blueberry mixture into a 9x9 inch baking dish, spreading the berries into an even layer.
- In a medium bowl, whisk together the rolled oats, almond flour, coconut sugar, salt, and cinnamon.
- Add the cold, cubed butter. Use your fingers or a pastry cutter to work the butter into the dry ingredients until the texture resembles coarse crumbs with some pea-sized chunks of butter remaining.
- Sprinkle the topping evenly over the blueberries, pressing down very lightly to ensure it adheres to the fruit.
- Bake for 40–45 minutes until the topping is a deep golden brown and the blueberry juices are bubbling vigorously around the edges.
- Remove from the oven and let it rest for 15 minutes to allow the filling to set before serving.
