Ingredients:

  • 2 cups (180g) rolled oats
  • 1 cup (240ml) almond milk
  • 1 large egg
  • 2 tbsp (28g) melted butter
  • 1 tsp (5ml) vanilla extract
  • 1 tsp (5g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 cup (150g) fresh blueberries
  • 4 oz (115g) cream cheese, softened
  • 1 tbsp (15ml) maple syrup
  • 1/2 tsp (2.5ml) vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  2. In a large bowl, whisk together the almond milk, egg, melted butter, and vanilla extract until smooth.
  3. Stir in the rolled oats, baking powder, and salt until combined.
  4. Gently fold in the fresh blueberries using a spatula to avoid bursting the berries.
  5. Pour the oat mixture into the prepared baking dish.
  6. In a small bowl, beat the softened cream cheese, maple syrup, and vanilla extract until velvety and smooth.
  7. Drop spoonfuls of the cream cheese mixture onto the top of the oat batter.
  8. Use a knife or toothpick to gently swirl the cream cheese into the oats to create a marble effect.
  9. Bake for 30–35 minutes until the edges are golden brown and the center springs back slightly when touched.
  10. Allow the dish to cool for 5 minutes before slicing into 6 servings.
