Ingredients:
- 2 cups (180g) rolled oats
- 1 cup (240ml) almond milk
- 1 large egg
- 2 tbsp (28g) melted butter
- 1 tsp (5ml) vanilla extract
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 1 cup (150g) fresh blueberries
- 4 oz (115g) cream cheese, softened
- 1 tbsp (15ml) maple syrup
- 1/2 tsp (2.5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
- In a large bowl, whisk together the almond milk, egg, melted butter, and vanilla extract until smooth.
- Stir in the rolled oats, baking powder, and salt until combined.
- Gently fold in the fresh blueberries using a spatula to avoid bursting the berries.
- Pour the oat mixture into the prepared baking dish.
- In a small bowl, beat the softened cream cheese, maple syrup, and vanilla extract until velvety and smooth.
- Drop spoonfuls of the cream cheese mixture onto the top of the oat batter.
- Use a knife or toothpick to gently swirl the cream cheese into the oats to create a marble effect.
- Bake for 30–35 minutes until the edges are golden brown and the center springs back slightly when touched.
- Allow the dish to cool for 5 minutes before slicing into 6 servings.
