Ingredients:
- 1.5 cups (190g) white whole wheat flour
- 0.5 cup (100g) coconut sugar
- 1 tbsp (12g) baking powder
- 0.5 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 0.5 cup (120g) plain Greek yogurt
- 0.5 cup (120ml) low-fat buttermilk
- 1 large (50g) egg
- 2 tbsp (30ml) coconut oil
- 1 tsp (5ml) vanilla extract
- 1.5 cups (225g) fresh blueberries
- 0.25 cup (30g) rolled oats
- 1 tbsp (12g) maple syrup
- 0.5 tsp (1g) ground cinnamon
- 1 tbsp (14g) coconut oil
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper.
- Toss the blueberries in a small bowl with 1 teaspoon of the measured flour to prevent them from sinking.
- In a large bowl, whisk together the flour, coconut sugar, baking powder, salt, and cinnamon.
- Create a well in the center and add the Greek yogurt, buttermilk, egg, oil, and vanilla.
- Gently stir the mixture with a spatula until flour streaks disappear, then fold in the floured blueberries.
- Pour the batter into the prepared pan and smooth the top.
- Mix the rolled oats, maple syrup, cinnamon, and oil in a small bowl, then sprinkle evenly across the top of the batter.
- Bake for 32–38 minutes until edges are mahogany-gold and a toothpick inserted in the center comes out clean.
- Let the cake rest in the pan for 10 minutes before transferring it to a wire rack to cool.
