Ingredients:
- 1 lb (450g) lean ground turkey
- 1 tbsp (15ml) olive oil
- 1 medium (110g) yellow onion, finely diced
- 3 cloves (9g) garlic, minced
- 1 tbsp (6g) fresh ginger, grated
- 1/2 cup (60g) water chestnuts, finely diced
- 2 green onions, thinly sliced
- 3 tbsp (45ml) soy sauce
- 1 tbsp (15ml) rice vinegar
- 1 tbsp (15ml) honey
- 1 tsp (5ml) toasted sesame oil
- 1/2 tsp (2g) red pepper flakes
- 1 head (300g) butter lettuce
- 1 tbsp (15ml) toasted sesame seeds
- Fresh cilantro leaves for garnish
- Sliced red chilies for garnish
Instructions:
- Wash and dry the lettuce leaves carefully. Separate the leaves from the head, keeping them whole and intact. Set them aside in a bowl of ice water for 5 minutes to maximize the snap before draining and patting dry.
- Heat the olive oil in a skillet over medium-high heat until it shimmers. Add the ground turkey, breaking it apart with a spatula. Cook without stirring too often until the meat is browned and mahogany-colored.
- Stir in the diced onion and cook for 3-4 minutes until translucent. Add the garlic and ginger, sautéing for 60 seconds until fragrant.
- Stir in the diced water chestnuts.
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes.
- Pour the glaze over the turkey. Toss constantly for 2 minutes until the sauce thickens and coats the meat in a glossy sheen.
- Let the turkey mixture rest for two minutes, then spoon into chilled lettuce leaves. Garnish with sliced green onions, toasted sesame seeds, cilantro, and red chilies.
