Ingredients:
- 1 lb lean ground turkey
- 1 tbsp avocado oil
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 large carrot, shredded
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp toasted sesame oil
- 1 tsp sriracha
- 1 head butter lettuce, leaves separated and washed
- 2 stalks green onions, thinly sliced
- 1 lime, cut into wedges
Instructions:
- Heat the oil in a large non-stick skillet or wok over medium-high heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for 60 seconds until fragrant.
- Increase heat slightly and add the ground turkey. Break the meat apart with a spatula, cooking until no longer pink and slightly browned on the edges.
- Stir in the shredded carrots and cook for another 2 minutes until softened.
- Pour in the soy sauce, rice vinegar, honey, sesame oil, and sriracha. Stir constantly for 2-3 minutes until the sauce thickens and coats the turkey in a glossy glaze.
- Spoon approximately 1/4 cup of the turkey mixture into each chilled lettuce leaf. Top with sliced green onions and a squeeze of fresh lime juice.
