Ingredients:

  • 1 lb lean ground turkey
  • 1 tbsp avocado oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 large carrot, shredded
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • 1 tsp sriracha
  • 1 head butter lettuce, leaves separated and washed
  • 2 stalks green onions, thinly sliced
  • 1 lime, cut into wedges

Instructions:

  1. Heat the oil in a large non-stick skillet or wok over medium-high heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Stir in the minced garlic and grated ginger, cooking for 60 seconds until fragrant.
  3. Increase heat slightly and add the ground turkey. Break the meat apart with a spatula, cooking until no longer pink and slightly browned on the edges.
  4. Stir in the shredded carrots and cook for another 2 minutes until softened.
  5. Pour in the soy sauce, rice vinegar, honey, sesame oil, and sriracha. Stir constantly for 2-3 minutes until the sauce thickens and coats the turkey in a glossy glaze.
  6. Spoon approximately 1/4 cup of the turkey mixture into each chilled lettuce leaf. Top with sliced green onions and a squeeze of fresh lime juice.
