Ingredients:

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 cup diced carrots
  • 1 medium zucchini, diced
  • 1 red bell pepper, chopped
  • 1/2 cup frozen peas
  • 1/2 yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 2 tbsp low-sodium soy sauce

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the ground turkey, spreading it across the pan. Let it sear undisturbed for 3 minutes to create a brown crust, then break it into small crumbles and cook until no longer pink.
  2. Push the cooked turkey to the edges of the pan. Add the diced onions and carrots to the center and sauté for 3 minutes. Toss in the bell peppers and zucchini, stirring constantly for another 3-4 minutes until vegetables are bright but still crisp.
  3. Stir in the minced garlic, smoked paprika, oregano, salt, and pepper. Cook for 60 seconds until fragrant.
  4. Pour in the soy sauce and stir rapidly for 1 minute, allowing the liquid to reduce into a glossy coating that envelops the turkey and vegetables.
