Ingredients:
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 cup diced carrots
- 1 medium zucchini, diced
- 1 red bell pepper, chopped
- 1/2 cup frozen peas
- 1/2 yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
- 2 tbsp low-sodium soy sauce
Instructions:
- Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the ground turkey, spreading it across the pan. Let it sear undisturbed for 3 minutes to create a brown crust, then break it into small crumbles and cook until no longer pink.
- Push the cooked turkey to the edges of the pan. Add the diced onions and carrots to the center and sauté for 3 minutes. Toss in the bell peppers and zucchini, stirring constantly for another 3-4 minutes until vegetables are bright but still crisp.
- Stir in the minced garlic, smoked paprika, oregano, salt, and pepper. Cook for 60 seconds until fragrant.
- Pour in the soy sauce and stir rapidly for 1 minute, allowing the liquid to reduce into a glossy coating that envelops the turkey and vegetables.
